Just a casual Wednesday night pheasant. If the pandemic has taught us anything, it's to enjoy every moment!⁣

This was my first time cooking pheasant and I quickly learned that this is one fatty beast. Its a bit like duck, you need to pan fry it first to render out some of the fat. I didn't quite do this, so my arteries are clogging as we speak. ⁣

Pheasant is a gamey bird but far less so than duck. So if you feel like having a roast but you're on your own, the dainty pheasant is perfect. Its served here with a simple Chinese cabbage salad.⁣

Chinese New Year celebrations aren't complete without a whole fish. The intact fish represents unity and prosperity. ⁣

This is sea bass, steamed then coated in soy, garlic, ginger and spring onions. Cooking whole fish is much easier than fillets as there's less risk that the flesh will over cook. For example, I'd normally steam this fish for 12-15 mins but forgot about it, and ended up steaming it for 20mins. It was still good! ⁣

This was my Chinese New Year Eve dinner, glutinous rice with chicken and mushroom. As much as I love this dish, it felt sad to celebrate with it. ⁣⁣⁣

The Reunion Dinner on CNY Eve is the most important meal in the Chinese calendar. There's usually a bountiful salad, whole fish, succulent bird and plenty more. But most importantly, you're surrounded by friends and family.⁣⁣⁣

All of that was not possible with lockdown. Even harder was that there was no lunar new year atmosphere at all here. There's no mention of it on TV, radio or on the streets. It's just another Thursday. ⁣⁣⁣

This is nian gao, a traditional new year treat in Chinese households. It's made by steaming a batter of sugar, glutinous rice flour and water in banana leaves to get a chewy, caramel-like pudding.⁣
⁣
Traditional recipes call for it to be steamed for 12 hrs so that the sugar caramelises. But I don't have that kind of patience. So I caramelised the sugar before mixing the other ingredients, bringing the steaming time down to 2hrs.⁣
⁣
My favourite way to eat this is to slice it, cover it in batter and deep fry it. But I opted for a healthier toastie press method this time. Gong xi fa cai!⁣
